绿茶多酚和儿茶素提取与原料品质关系的研究

根据试验室研究和工厂大生产中原料收购的多年榆测结果，对绿茶多酚和儿茶素提取与原料含量进行了系统的统计分析与研究．结果表明，云南人叶种绿茶比小叶种绿茶具有较高的茶多酚和儿茶素总量，且在儿茶素组成上表现为较高的Ecg，EC和DL-C，而小叶种EGCg和EGC含量较高，同一绿毛茶原料筛分不同规格绿副茶、不同茶树品种绿副茶、商山与平地茶旧绿副茶的茶多酚、儿茶素总量、儿茶索组分含量均有明显的差异．由大叶种原料和小叶种原料提制的产品在儿茶素组成上存在差异，人叶种产品表现为较高的Ecg，EC，DL-C和较低的EGCg／ECg而小叶种产品有高含量的EGCg和较高的EGCg/ECg．原料中茶多酚和儿茶素的含量高，制备的产品中相应的成分含量也高，同时产品成本低。

On Relationship between Green Tea Polyphenols and Catechins and Green Tea Raw Materials

The paper is focused on the investigation of relation between green Tea polyphenol and catechins composition in green tea.Results show that there is a great difference in the content of tea polyphenols and tea catechins between different areas,species and variety of green tea.The content of total catechins in the big-leaf variety green tea is higher than that in the small-leaf variety green tea.The content of EGCg and EGC in the small-leaf variety green tea is higher than that in the big-small variety green tea, while the content of ECg, EC and DL-C in the big-small variety green tea is much more. The catechins extracted from the small-leaf variety green tea contained higher EGCg ,EGC and higher ratio of EGCg/ECg ,while ones from big-small variety green tea composed more ECg,EC,DL-C and lower ratio of EGCg/ECg,The corresponding content in products extracted from green tea possesses high content of tea polyphenols with higering tea catechins in green tea is and the lowest cost.
