绿茶多酚和儿茶素提取与原料品质关系的研究

摘    要:根据试验室研究和工厂大生产中原料收购的多年榆测结果,对绿茶多酚和儿茶素提取与原料含量进行了系统的统计分析与研究.结果表明,云南人叶种绿茶比小叶种绿茶具有较高的茶多酚和儿茶素总量,且在儿茶素组成上表现为较高的Ecg,EC和DL-C,而小叶种EGCg和EGC含量较高,同一绿毛茶原料筛分不同规格绿副茶、不同茶树品种绿副茶、商山与平地茶旧绿副茶的茶多酚、儿茶素总量、儿茶索组分含量均有明显的差异.由大叶种原料和小叶种原料提制的产品在儿茶素组成上存在差异,人叶种产品表现为较高的Ecg,EC,DL-C和较低的EGCg/ECg而小叶种产品有高含量的EGCg和较高的EGCg/ECg.原料中茶多酚和儿茶素的含量高,制备的产品中相应的成分含量也高,同时产品成本低。

Abstract:The paper is focused on the investigation of relation between green Tea polyphenol and catechins composition in green tea.Results show that there is a great difference in the content of tea polyphenols and tea catechins between different areas,species and variety of green tea.The content of total catechins in the big-leaf variety green tea is higher than that in the small-leaf variety green tea.The content of EGCg and EGC in the small-leaf variety green tea is higher than that in the big-small variety green tea, while the content of ECg, EC and DL-C in the big-small variety green tea is much more. The catechins extracted from the small-leaf variety green tea contained higher EGCg ,EGC and higher ratio of EGCg/ECg ,while ones from big-small variety green tea composed more ECg,EC,DL-C and lower ratio of EGCg/ECg,The corresponding content in products extracted from green tea possesses high content of tea polyphenols with higering tea catechins in green tea is and the lowest cost.
