摘    要: 本文根据当前我国主要麦区有代表性生产品种的品质测定结果,分析我国小麦品质现状,对我国优质面包小麦的各项品质标准进行了探讨,并针对我国小麦品质改良工作中存在的问题提出了若干建议。

Abstract:Authors analysed the present situation of wheat quality on the basis of determined results of quality characteristics of representative cultivars from the main wheatproducing regions in China, and went preliminarily into the qualitative criteria of wheat with good breadmaking quality. And then the authors put forward some proposals to counter the problems in quality improvement in China at present.
