| 摘 要： | 低聚木糖因其优良的加工性能和生理功能,被广泛应用于食品、饲料、医药等领域。对低聚木糖的生产、特性、应用及前景进行了概述,重点介绍了低聚木糖的物理性质、生理功能及其在食品工业中的应用。
