摘    要:阐述了冰温保鲜技术和充气包装保鲜技术的原理和研究现状,分析了两种技术各自的特点。提出了冰温结合充气包装保鲜技术在蔬菜保鲜应用中的技术路线。对于大多数食品,冰温处理的货架期是普通冷藏的1.5~4.0倍。充气包装保鲜技术在食品保鲜中也具有良好的效果。在蔬菜采摘后对其进行冰温加充气包装保鲜,可有效延长其货架期。

Abstract:The principles and research advances of ice temperature and gas packaging preservation technologies were introduced,and the characteristics of the two technologies were analyzed.Application of ice temperature combined with gas packaging in preservation of vegetables was proposed.For most of foods,shelf life of food treated by ice temperature was 1.5~4.0 times than that of common cold storage food.Gas packaging preservation technology also had good effect.Application of ice temperature combined with gas packaging on postharvest vegetables could prolong their shelf life effectively.
