长沙市售新鲜蔬菜中硝酸盐含量的测定

摘    要:以长沙市售13种主要蔬菜为材料,采用紫外分光光度法测定其硝酸盐含量。结果表明,不同类型蔬菜中的硝酸盐含量差异很大,其趋势为叶菜类>根菜类>瓜类>茄果类;同一类型蔬菜中的硝酸盐含量也不相同;且所测市售蔬菜中硝酸盐含量与国标相比,除冬瓜、黄瓜和茄子超标外,其余均达到食用标准。

Abstract:Thirteen kinds of vegetables from Changsha’s market were used as test materials and the nitrate content was directly determined by the UV-spectrophotometric method.The results demonstrated that the contents of nitrate in different vegetables varied significant,vegetables basically corresponded with the following tendency: leafy vegetables > root vegetables > gourd vegetables > golanaceous vegetables.Different kinds of vegetables of the same classification obviously had different levels of nitrate content;and different kinds of vegetable in Changsha city reached sanitation standard when cornpared with the national standard except white gourd,cucumber and eggplant.
