金盏菊花黄色素的性质研究

摘    要:该文采用溶剂提取法和紫外可见分光光度法 ,研究了金盏菊花黄色素的提取方法、稳定性和抗氧化性以及色素提取物的各项指标 .结果表明 :金盏菊花黄色素主要是类胡萝卜素 ,用等体积的石油醚和丙酮作浸提剂有较高的提取率 ,所得提取物呈红色油状液体 ,具有油溶性 ,各项指标均符合国家标准 ;该色素对热、酸、碱、氧化剂、还原剂、室内散射光、紫外光、络合剂及大部分金属离子稳定 ,但对日光及少数金属离子 (如Fe3+ ,Al3+ ,Cu2 + )不稳定 ;该色素有显著的抗油脂氧化效果

Abstract:The extraction, stability and anti\|oxidation of yellow pigment from Calendula officinalis L. flowers were studied by means of solvent\|extraction process and ultraviolet\|visible spectrophotometry. The results showed that the pigment was mostly composed of carotenoids, and the extraction rate was high with petroleum ether and actone of equal volume. The extract was red lipidic liquid, with indexes reaching to the national standards. The pigment was stable to heat, acid, alkali, oxidizer, reductant, ultraviolet ray, complexer and most metallic ions except Fe 3+ , Al 3+ , Cu 2+ and sunlight. The pigment had remarkable anti\|oxidation on lipids.
