摘    要:蔬菜体内硝酸盐的危害正越来越受到消费者和科研人员的高度关注.本文全面总结了国内在蔬菜硝酸盐积累机制及控制措施方面的研究进展,分析了存在的问题,提出了今后的研究方向.调查研究结果充分表明,我国各类蔬菜硝酸盐含量均不同程度的超标,根茎叶类蔬菜硝酸盐污染较为严重.由于蔬菜硝酸盐的积累具有广泛的遗传变异,甚至同一植株不同器官、不同生育阶段也存在较大的差异,而且施肥、温度、光照多种环境因素对其影响较大,因此蔬菜硝酸盐的控制要在深入研究其生理及遗传机制的基础上采用综合措施.

Abstract:The harm of nitrate in vegetables to human is becoming a cause for concern of consumers and researchers. The research progress in nitrate accumulation of vegetables and its control was summarized, and prospective research was also put forward in the paper. The investigations done by different groups in China showed that all kinds of vegetables in China market, are polluted by nitrate, especially for root, stem, and foliage vegetables. The previous researches also showed that genetic variation of nitrate accumulation in vegetables are great, and the significant variation exists among organs in vegetable as well as among growing stages. In addition to plant internal factors, cultivation and environmental factors including fertilization, temperature and illumination intensity influence nitrate accumulation in vegetables greatly as well. From the previous researches, it can come to the conclusion easily that in order to control the nitrate accumulation well, cooperative approaches or comprehensive method need to be established on the basis of the understanding of influence of internal and external factors on nitrate accumulation in vegetables.
