中草药复合保鲜涂膜剂对鸡蛋的保鲜效果

试验研究了蒲公英、白芨2种中草药浓缩液与壳聚糖复合对鸡蛋涂膜保鲜效果的影响,在室温20～32℃,相对湿度65%～80%的夏季自然条件下贮藏35 d,对鸡蛋的失质量率、气室高度、蛋黄指数、浓蛋白含量、pH值进行了测定。结果显示,与对照组相比,蒲公英浓缩液+壳聚糖和白芨浓缩液+壳聚糖在蛋的失质量率、蛋黄指数、浓蛋白含量、pH值分别呈极显著和显著差异;合格蛋率在28 d前达100%,且每个鸡蛋的涂膜成本只有0.01元左右;在夏季高温条件下,能够使鸡蛋保鲜期延长14 d。

Effect to Eggs of Chinese Herbal Medicine Composite Coating Preservation

The effect of egg coating preservation with composite of chitosan and concentrated solution of Chinese herbal medicine dandelion and bletilla was studied.Rate of weight loss,gas chamber height,yolk index,thick protein content and pH value of the eggs were assayed after 35 d of storing under the conditions of natural room temperature 20-32 ℃ and of 65%-80% of relative humidity in summer.The results showed that: compared with the control,rate of weight loss,yolk index,thick protein content and pH value of the eggs coated by condensed liquid of dandelion + chitosan and condensed liquidt of bletilla + chitosan were significant different,the coated eggs were kept 100% fresh after 28 days' storage.The coating cost is about 0.01 yuan per egg.14 d egg-fresh-keeping could be prolonged in hot summer natural condition by coating preservation.
