冬枣的湿冷保鲜技术研究

摘    要:研究了不同采收期、不同成熟度冬枣的耐贮性 ,并比较了化学防腐剂和臭氧的杀菌、抑菌效果。结果表明 ,半红果的耐贮性明显好于全红果 ,臭氧能有效地杀死和抑制霉菌产生 ,氧化产生的乙烯和乙醇 ,延长冬枣的贮藏寿命

Study in Humidicool Storage and Fresh-keeping Technology on Chinese Jujube Dongzao
Abstract:This paper studied the storage properties of Dongzao of different harvesting time and maturity degree,and the effect of sterilization of chemical preservative was compared to that of ozone.The results showed that the storage properties of half red fruit was obviously better than that of full red fruit.Moreover,ozone,as a strong oxidant,could sterile or resist the development of mold,and oxidize ethene and alcohol in the storage.By this means,the storage life of Dongzao will be longed.
