麸皮添加量对杏鲍菇品质的影响

摘    要:依据GB 5009的检测方法,分析了不同麸皮添加量对杏鲍菇品质的影响。结果显示,麸皮添加量为20%和25%栽培的杏鲍菇品质较好,其含水量分别为11.54%和11.52%,蛋白质含量分别为27.49%和27.51%,粗脂肪含量分别为1.90%和1.83%,粗纤维含量分别为16.21%和16.43%,总糖含量分别为34.60%和34.54%,灰分含量分别为7.84%和7.77%;矿质元素(mg/100 g)钾含量分别为1.91和1.68,钙含量分别为143和117,铁含量分别为31和27,镁含量分别为980和985,锌含量分别为41和42,铜含量分别为9和11,锰含量分别为10和15;氨基酸总量分别为16.59%和16.06%,必需氨基酸含量分别为6.40%和6.15%。

Abstract:According to GB 5009 methods,quality of Pleurotus errngii use substratum with different addition levels of wheat bran was analyzed.The results showed that the addition level of wheat bran of 20% and 25% had the highest cultivation yield:water 11.54%,11.52%; protein 27.49%,27.51%; crude fat 1.90%,1.83%; crude fiber 16.21%,16.43%; total sugar 34.60%,34.54%; ash 7.84%,7.77%; The mineral elements (mg/100 g):K 1.91,1.68; Ca 143,117; Fe 31,27; Mg 980,985; Zn 41,42; Cu 9,1 1; Mn 10,15.The total content of amino acids were 16.59%,16.06% and 6.40%,6.15% of essential amino acid.
