窖藏马铃薯酚类物质及相关酶活性的变化与自然休眠的关系

摘    要:以窖藏品种黄麻子马铃薯为试验材料,贮藏过程中每30 d取样测定块茎的酚类物质含量及各种酶活性的变化,研究其在自然休眠期间的动态变化,以期探讨马铃薯休眠及萌发的机理。结果表明,酚类物质含量与苯丙氨酸解氨酶(PAL)的活性在自然休眠期间持续缓慢降低,但随着休眠的结束,含量急剧上升;块茎中酚类物质含量的变化趋势与苯丙氨酸解氨酶(PAL)活性呈正相关,与多酚氧化酶(PPO)活性呈负相关;而淀粉酶与过氧化物酶(POD)的活性在自然休眠期间逐渐增强,随着休眠的解除及顶芽的萌发,活性降低,甚至消失。

Abstract:The potatoes stored in cellar were taken every thirty days and were used to determine phenols content and all enzyme activity.The results showed that the content of phenols and PAL activity dropped steadily at primary stage and rose quickly at later stage.The trend of the content of total phenols was positively related with the trend of PAL activity and was negatively related with the trend of PPO activity.However,amylase and POD activity had an increase tendency during endo-dormancy period and decreased during dormancy breaking of potato tubers.
