超声波提取苹果多酚类物质的优化研究

摘    要:通过正交试验设计,研究了超声波处理条件下超声波设备参数和提取操作参数对苹果多酚类物质的提取作用效果。结果表明:(1)超声波设备参数中功率的效果>频率,不同功率的影响效果差异显著,不同频率的影响未达到差异显著性水平;(2)提取操作参数的相对重要性排序为:液料比**>pH**>提取温度>物料粒度>时间;(3)试验条件下的最佳工艺方案为:使用超声波频率40 kHz、功率200 W,在提取温度70℃,时间30 min,pH为3,液料比10:1,物料粒度1.19 mm的条件下,提取效率达2 375.60mg/kg。

Abstract:The effect of the ultrasonic facilities variety and technological variety on the extraction of apple polyphenol,with the orthogonal experiment design,was studied.The result indicated:(1)The effect of ultrasonic facilities variety was frequency > power,the effect has significant deviation at different levels of power,and has no significant deviation under different levels of frequency;(2)The relative importance of process variety in the extract efficient followed the order: solid / liquid rate > pH> extract temperature >granularity size > extracting period;(3)The compositive optimization variety of extracting process in ultrasonic assisted extraction was 40 kHz frequence,200 W power,70 ℃ extract temperature,30 min extracting period,pH 3,10:1 liquid /solid rate,granularity size 1.19 mm and 2 375.60 mg/kg extract yield was obtained.
