新几内亚凤仙花色素苷的性质研究

摘    要:首次探讨了温度、光照、pH值、金属离子、氧化剂、还原剂、食品添加剂等条件对新几内亚凤仙花色素苷性质的影响。结果表明:新几内亚凤仙花色素苷在强酸性条件下较稳定,抗氧化和抗还原能力不强,对光照及高温不稳定,受Cu^2 、Fe^2 、Fe^3 等金属离子的影响较大。

Study on the properties of anthocyanin from Impatiens hawkeri

Abstract:Impatiens hawkeri flowers contain natural anthocyanin.The effects of temperature, illumination, pH value, metallic ions, oxidants, reductants and food additives on properties of the anthocyanin were studied. The results showed that: the anthocyanin extracted from Impatiens hawkeri was more stable in acid conditions than that in base conditions; the abilities of anti-oxidation and anti-reduction were not strong; it was not stable under high temperature and illumination; Cu~(2+),Fe~(2+),Fe~(3+) had significant effects on the anthocyanin.
