摘    要:以‘新红星’及‘富士’苹果为试材,研究了0.5μL/L 1-MCP对常温下不同软化特性苹果的保鲜效应.结果表明:贮藏期间1-MCP能够显著降低2品种果实呼吸强度及乙烯释放速率,降低β-半乳糖苷酶(β-Gal)活性,维持较高的可滴定酸(TA)和Vc含量,抑制可溶性同形物含量(SSC)的升高.另外,1-MCP能延缓‘新红星...

Abstract:The effect of 0.5 μL/L 1-MCP was investigated on ’Starkrimson’ and ’Fuji’ apples which were cultivars with different soft characteristics.The results showed that,at normal temperature,1-MCP significantly decreased the respiration and ethylene production rate both on ’Starkrimson’ and ’Fuji’ apples.Activity of β-galactosidase(β-Gal) was reduced immediately after 1-MCP treatment.Both the content of Vitamin C and the titratable acid content were maintained,but the increase of soluble solid content was suppressed by 1-MCP.In addition,1-MCP delayed the decrease of protopectin content and the increase of soluble pectin content,and inhibited the increase of cell membrane permeability,finally postponed fruit softening of ’Starkrimson’ apple.However,1-MCP had less effect on fruit softening,protopectin content and cell membrane permeability of ’Fuji’ apple,which indicated that 1-MCP had different preserving effect on two different softening type cultivars.
