合作猪肉质常规性状分析

摘    要:对合作猪肉品理化特性、食用营养特性等肉质常规性状进行了测定与分析,结果表明:合作猪肉色鲜红,45 min内肉色值评分为3.44;肌肉大理石纹适中,系水力强;失水率和滴水损失均值分别为:11.05%、1.33%;剪切力值小,具有良好的肌肉理化特性.合作猪食用营养价值较高,脂肪含量、蛋白质含量测定均值分别为2.11%、21.09%;并富含多种人体必需的矿物质元素及微量元素,具有较高的研究与开发价值.

Abstract:The physical and chemical characters,the edible nourishment and the mineral element content of Hezuo swine were analyzed.The results showed that the average score of meat color of Hezuo swine was 3.44;the muscle marble was moderate,water holding capacity was good;the rate of water loss and drip loss was 11.05 %,1.33 %;shear force value was low.The edible nourishment properties of Hezuo swine were good with the fat content of 2.11 % and the protein content of 21.09 %,and it also contained lots of mineral elements and trace elements.
