摘    要:食品质量指纹技术是采用现代的分析手段,得到的能够代表该样品特性的色谱、光谱以及其它图谱数据资料,是食品固有的综合的品质特征,也是辨别食品防伪的有效参考.指纹图谱不仅依赖于先进的分析技术,而且还与数学统计手段以及计算机模拟的方法学密切相关.本文对质量指纹技术在酒类、果蔬、食用油及奶油、肉及肉制品的开发应用现状进行了综述.

Abstract:The quality fingerprint spectrum of food is an all-around chromatography,spectrum or other data obtained by modern analytical technology,which represents the characteristics of food.The fingerprint spectrum can be used to distinguish true and false of food.The obtaining of spectrum not only dependences on advanced analytical equipments but connects with the methods of mathematical statistics and computer simulation.It is reviewed the technology of quality fingerprint spectrum on alcohol,wine,beer,fruit,edible vegetable oil,butter,meat and its products in this paper.
