番茄红素研究进展

摘    要:番茄红素是一种黄/红色类胡萝卜素,广泛存在于自然界中。作为一种功能性天然色素,番茄红素主要应用于食品添加剂、天然着色剂、化妆品等行业。番茄红素具有独特的理化性质和抗癌、抗氧化、增强免疫力、预防心血管疾病等多种生理功能,其提取工艺和测定方法主要有:有机溶剂浸提法、酶反应法、超临界流体萃取法、微波提取法、超声波提取法和纸色谱法、薄层色谱法、高效液相色谱法、差示扫描量热法等。随着相关研究的不断深入,番茄红素的应用领域将会越来越广泛。

Abstract:Lycopene,a yellowish or red carotenoid which widely distributes in the nature is a functional natural pigment.It is mainly used as food additive,natural dyestuff,cosmetic,etc.Moreover,it has unique physicochemical properties and various physiological functions which include anticancerous,antioxidative,immunity enhancing and cardiovascular disease preventing properties,etc.The main extraction processes for lycopene are organic solvent extraction,enzyme reaction,supercritical fluid extraction,microwave extraction and ultrasonic extraction.Its main determination methods are paper chromatography,thin layer chromatography,high performance liquid chromatography and differential scanning colorimetry.Lycopene will be applied in wider fields with further studies.
