贵妃公鸡×麒麟母鸡杂交F1代的体尺与肉用性能测定

摘    要:[目的]了解贵妃鸡、麒麟鸡及其杂交鸡(贵妃公鸡×麒麟母鸡的F1代)的肉用性能特点,为进一步保种选育及开发利用贵妃鸡与麒麟鸡奠定基础.[方法]随机选取相同条件下饲养的14周龄贵妃鸡、麒麟鸡及其杂交鸡各12羽(公母各半),测定其体尺性状、屠宰性能和部分肉品质并进行比较分析.[结果]饲养至14周龄时,除龙骨长外,体斜长、胫长、胫围等3个体尺性状均表现为:麒麟鸡>杂交鸡>贵妃鸡,且麒麟鸡与贵妃鸡差异显著(P<0.05,下同).在屠宰性能方面,各指标均表现为:麒麟鸡>杂交鸡>贵妃鸡,且不同性别间的对比均是公鸡的各项指标高于母鸡.3种鸡的胸肌、腿肌肉色[红度值(a)、黄度值(b)、亮度值(L)]、pH、剪切力和失水率差异均不显著,综合各项肌肉品质指标,其肌肉品质排序为:麒麟鸡>杂交鸡>贵妃鸡.[结论]以贵妃公鸡与麒麟母鸡杂交获得的F1代在生产性能上能够部分改善贵妃鸡体型过小及麒麟鸡腹脂高、肌肉嫩度差等方面的缺陷.

Abstract:[Objective]The meat performance of Princess Chicken, Frizzle Chicken and their Crossed Broiler F1 (CBF1) was studied to provide references for further conservation, breeding and utilization of Princess Chicken and Frizzle Chicken. [Method] 14-week-old Princess Chicken, Frizzle Chicken and Crossed Broiler each with 12 birds (6 male and 6 female) were randomly selected to measure and compare their body size, slaughter performance and some parameters of meat quality. [Result]The results showed that in addition to the keel length, the body size sequence was Frizzle Chicken〉Crossed Broiler〉Princess Chicken. There were significant differences between Princess Chicken and Frizzle Chicken (P〈0.05 ,the same below). In ~slaughter performance, the sequence was Frizzle Chicken〉Crossed Broil- er〉Prineess Chicken. The indicators of female were higher than those of male. There was no significant difference a- mong these three kinds of chicken in the meat color [red value (a) , yellow value (b), brightness value (L)], pH, shear force and water loss rat of breast muscle and leg muscle. All in all, the sequence of meat quality was Frizzle Chicken〉Crossed Broiler〉Princess Chicken. [Conclusion]The hybrid chicken derived from male Princess Chicken and female Frizzle Chicken can improve some traits such as too small body size of Princess Chicken and too high abdomi- nal fat and too poor muscle tenderness of Frizzle Chicken.
