日粮共轭亚油酸对骡鸭生产性能与肌肉品质的影响

摘    要:目的]研究日粮中添加共轭亚油酸(CLA)对骡鸭生产性能与肉品质的影响,为开发富含CLA的功能性鸭肉产品提供理论依据.方法]选取发育良好、体重相近的7日龄骡鸭60羽,分别饲喂基础日粮和添加1.0% CLA的试验日粮,饲养49 d后,测定其生长性能、屠宰性能、肌肉化学组成及氨基酸、脂肪酸、血清脂类含量.结果]日粮中添加1.0% CLA对骡鸭的生长增重和饲料/增重比无显著影响(P>0.05,下同),但能显著提高胸肌粗蛋白和腿肌苏氨酸(Thr)、丝氨酸(Ser)、异亮氨酸(I1e)、苯丙氨酸(Phe)、精氨酸(Arg)水平(P<0.05,下同);同时能显著提高硬脂酸和亚油酸水平,极显著提高CLA水平(P<0.01,下同),极显著降低油酸和花生四烯酸水平.CLA虽能降低骡鸭血清的总胆固醇、甘油三酯和低密度脂蛋白胆固醇水平,提高高密度脂蛋白胆固醇水平,但效果均不显著.结论]在骡鸭日粮添加1.0% CLA,可提高其生产性能和屠宰性能,改善肌肉品质风味,增加CLA等多不饱和脂肪酸含量,为消费者提供富含必需脂肪酸和功能性CLA的鸭肉产品.

Abstract:Objective]The effects of dieta:ey conjugated linoleic acid on growth performance and meat quality in mule duck were studied to provide theoretical references for developing functional duck products rich in CLA. Method]Sixty 7-day-old mule ducks were selected and randomly divided into control group and experimental group, with 3 repeats in each group and 10 ducks for each repeat. The ducks were fed the control diet and experimental diet adding 1.0%CLA, respectively for 49d feeding trial, after which the growth performance, slaughter function, muscle chemical composition and the content of amino acid, fatty acid and serum lipid were measured. Result ] Diet adding 1.0% CLA had no significant effect on average daily gain and feed/gain (P〉0.05), but significantly increased crude pro- tein contents in breast muscle, and isoleucine, phenylalanine, threonine, serine and arginine content in leg muscle of mule duck (P〈0.05). There were significant differences in palmitic acid and eicosatrienoic acids contents in muscu- lar tissue between experimental group and control (P〉0.05), but dietary CLA significantly increased the stearic acid and linoleic acid content (P〈0.05), extremely .significantly increased the CLA content (P〈0.01), reduced the oleic acid and arachidonic acid contents in muscular tissue (P〈0.01), reduced content of serum total cholesterol, triglyceride and low density lipoprotein cholesterol and improve the content of high-density lipoprotein cholesterol (P〉0.05). Conclusion ]Adding 1.0% CLA to diet for mule duck could improve muscle nutritive value and meat quality and in- crease the content of CLA and other polyunsaturated fatty acids in meat of mule duck.
