脆肉鲩与普通草鱼肌肉显微结构观察

摘    要:【目的】观察对比脆肉鲩与普通草鱼肌肉显微结构的差异,为脆肉鲩的肉质加工提供科学依据。【方法】采集脆肉鲩和普通草鱼的背部白肌、背部红肌和腹部白肌,经石蜡组织切片和苏木素-伊红染色后,显微镜下观察肌纤维的形态特征,用肌纤维直径和密度两个指标衡量脆肉鲩与普通草鱼的肌纤维差异。【结果】脆肉鲩和普通草鱼背部白肌、腹部白肌及背部红肌的基本结构相同。脆肉鲩背部白肌的肌纤维直径(67.6μm)显著小于普通草鱼(109.4μm)(P〈0.05,下同),肌纤维密度(249条/mm2)N显著大于普通草鱼(121条/mm2);在腹部白肌和背部红肌的肌纤维直径、肌纤维密度方面,脆肉鲩与普通草鱼无显著差异(P〉0.05)。【结论】脆肉鲩肌肉的肌纤维直径及密度与其肌肉硬度具有一定相关性。

Abstract:Objective]Muscle microstructure of crisp grass carp and common grass carp was compared to provide scientif- ic references for meat processing of crisp grass carp. Method]Morphological characteristics of dorsal white muscle, dorsal red muscle and abdominal white muscle of crisp grass carp and common grass carp were observed under microscope after paraffin- embedded tissue section and hematoxylin-eosin staining. Muscle fiber differences between crisp grass carp and common grass carp were compared judging from muscle diameter and density. Result]Fundamental structure of dorsal white muscle, dorsal red muscle and abdominal white muscle of crisp grass carp and common grass carp was the same. Muscle fiber diameter of dor- sal white muscle from crisp grass carp (67.6 μm) was significantly smaller than that of common grass carp (109.4 μm) (P〈0.05, the same below). Muscle fiber density of dorsal white muscle (249/mm2) was significantly larger than that of common grass carp (121/mm2). There were no significant differences of muscle fiber diameter and density of dorsal red muscle and abdominal white muscle from crisp grass carp and common grass carp (P〉0.05). Conclusion ]There were certain relationships between muscle fiber density and diameter and muscle hardness of crisp grass carp and common grass carp.
