纳米结构脂质载体的研究进展及其在食品中的应用

摘    要:随着现代生活水平的提高,心脑血管等慢性病成为威胁人类健康的主要杀手之一,开发相应的新型功能食品对于延缓慢性疾病的发生有着极为重要的意义。而脂质由于特有的生物相容性和生物利用度,成为开发新型功能食品的重要原料成分和添加基料。纳米结构脂质载体是20世纪末发展起来的新型脂质纳米载体,可有效地解决水溶性低和生物相容性差的营养成分和生物活性物质的稳定性及控制释放问题,是一种极富发展前景的功能食品载体系统。综述了纳米结构脂质载体的结构特征、制备、表征方法及其在食品应用中的研究现状,将为纳米结构脂质载体在食品中的应用提供一定的理论依据。

Abstract:With the improvement of living standards, chronic diseases, particularly cardiovascular and cerebrovascular diseases, have been one of the dangerous killers threatening human health. Thus it is vital to develop new type functional foods to prevent chronic diseases. Due to its unique bioavailability, lipids, as the important ingredients and additive materials, are applied to functional foods. At the turn of the 20th century, a new generation of lipid nanoparticles, nanostructured lipid carriers (NLC), were developed for the delivery of bioactive components which were poor aqueous solubility for oral and parenteral administration. Therefore, NLC are prospective carrier systems for functional foods. This paper summarized the structure, preparation, characterization and research progress of NLC in food industry, which provides theoretical basis for its application.
