蓝莓果实理化成分含量比较分析与功能评价

摘    要:对8个蓝莓品种果实的理化成分含量进行了检测,结果表明:理化成分含量在不同品种间有明显差异;糖酸比在10.12%~18.61%之间,超氧化物歧化酶(SOD)含量在2.8×104~3.7×104 U/kg之间;K、Mg、Ca、Fe、Zn等元素的含量均较高,维生素B1、B2、B6和Ve的含量也较丰富;灿烂、园蓝、粉蓝3个品种的花青素苷总量分别为187.84、350.76和269.67 mg/100g。另外,对蓝莓果实各理化成分的功能进行了评价。

Abstract:The physicochemical component contents in the fruits of 8 blueberry varieties were detected,the results indicated that there were obvious differences in the physicochemical component contents among different varieties.The ratio of sugar to acid was between 10.12% and 18.61%,and the content of superoxide dismutase(SOD) was between 2.8×104 and 3.7×104 U/kg.The content of K,Mg,Ca,Fe and Zn element was high,and the content of vitamin B1,B2,B6 and Ve was abundant.The total content of anthocyanin in blueberry varieties Brightwell,Gardenblue and Powderblue was 187.84,350.76 and 269.67 mg/100g,respectively.Furthermore,the paper evaluated the function of every physicochemical component of blueberry.
