皖南烤烟化学成分与农艺性状和感官质量间的相关分析

摘    要:对皖南烤烟化学成分与农艺性状和感官质量之间的相关性进行了分析。结果表明:皖南烤烟的总糖、还原糖含量较高,农艺性状和感官质量较优。糖类物质含量与农艺性状之间呈明显的正相关关系,而总氮、烟碱、钾和氯含量与农艺性状之间呈明显的负相关关系。糖类物质含量与香气质、香气量、杂气、刺激性、余味、燃烧性和使用价值之间存在显著的正相关,而总氮和烟碱含量与这些感官质量指标之间存在显著的负相关。

Abstract:The analysis of the correlation between chemical components and agronomic characters,sensory quality of flue-cured tobacco in southern Anhui was carried out.The results showed that the contents of total sugar and reducing sugar were higher,and the agronomic traits and sensory quality were better.There was significant positive correlation between carbohydrate content and agronomic traits,while obvious negative correlation existed between agronomic traits and the contents of total nitrogen,nicotine,potassium and chlorine.There was significant positive correlation between carbohydrate content and aroma quality,aroma quantity,miscellaneous gas,thrill,aftertaste,combustion and use value,while the correlation between these sensory quality indexes and the contents of total nitrogen and nicotine was opposite.
