摘 要: | 本文采用正交实验方法优选了提取南酸枣[choerospondiasaxieearis]果皮色素的方法,并时提取工艺条件也进行了初步探索。实验结果表明,南酸枣果皮色素宜用碱液法浸提,在工艺上采用先酸洗后碱浸提的工艺最佳,其工艺条件是:碱液宜用氨水或氢氧化钠水溶液;控制溶液pH为13~14;加料比为:干原料:浸提液=1:5~7(W/W)或新鲜原料:浸提液=1:3~5(W/W);浸提温度为80~85℃;浸提时间为60min以上,浸提次数为2次,色素浸膏的产率可达18.4%~21.7%,色素的提取率为72.0%~78.6%,色素浸膏的质量达到了国内同类产品企业标准的要求。

Abstract: | Research on the extracting way , processing technique and technological conditions ofextracting natural food pigment from choerospondias axillaris peel were reporteel in the paper.Theresults show that extraction rate with base-water way is the highest.The optimum pH temperature,time of extraction and peel were 13-14 , 80-85℃. over 60 mins. and 5-7 or 3-5(W/W)respectivery. The yield of the pigment paste was 18.4%~21.7%. The pipment paste quality reachesthe demands of the chinese enterprise standards. |
