中性条件下酪蛋白的胰蛋白酶酶促水解研究

摘    要:利用试验设计研究了中性条件下酪蛋白的胰蛋白酶催化水解,得到了在一定的条件下酪蛋白水解物水解程度的变化规律(回归模型).它不仅与实际试验结果相符,还可以用于其它条件下酪蛋白水解程度的预测;利用试验设计还可以对酪蛋白的限制水解进行优化条件选择.

Abstract:The enzymatic hydrolysis of casein by trypsin under neutral condition was studied through dual quadratis rotary combination design, and the changing pattern of the degree of hydrolysis(DH) of casein hydrolysates during hydrolysis at selected conditions was determined.This pattern was found to be in concordance with the actual experimental results, and therefore, can be used to forecast the DH of casein hydrolysates.The dual quadratis rotary combination design can also be used for selection of the perfect hydrolysis conditions for the limited hydrolysis of casein.
