锥栗果实营养成分分析与品质的模糊评判

摘    要:对福建建瓯9个锥栗主栽品种黄榛、乌壳长芒、油榛、白露仔、薄壳仔等的果实进行营养成分分析.结果表明,其果实营养成分均以淀粉、糖类为主,并含有较丰富的蛋白质、脂肪、纤维、维生素C和Ca、K、Mg,Mn等矿质元素;品种间多项含量值差异明显,并依据10个营养指标对其营养品质作出了初步评价.

Analyses of Nutrient Ingredients and Quanlity Evalution in Nuts of Chinquapin(Castanea henryi)
Abstract:Nutrient ingredients in nuts of nine major cultivars of chanquapion in Fujian Provice such as Huangzhen,Wukechangmang(Castanea henryi RehdEt Wilscv) etc were analysizedThe results showed that their nutrient ingredients in nuts were mainly composed of starch,carbohydrates and rich in proteins,fat,fibres,vitamin C and many mineral elements such as Calcium,Potassium,Magnesium,Manganese etc;and there were distinct differences in several items between cultivarsIn the meanwhile,their nutrient qualities were pretiminarily evaluated according to ten nutrient indexs
