獐子岛野生刺参体壁营养成分的分析

摘    要:对1月和5月黄海獐子岛海域的野生刺参Apstichopus japonicus体壁中的水分、粗蛋白质、粗脂肪、灰分、糖分含量及脂肪酸、氨基酸的组成进行了分析,结果表明:1月和5月刺参体壁中的水分含量(均为质量分数)分别为90.92%和92.00%,二者之间存在显著差异(P〈0.05);粗蛋白、粗脂肪、灰分、糖分含量分别为4.92%、3.40%,0.10%、0.31%,2.58%、2.93%,0.19%、0.30%,两月间均存在极显著差异(P〈0.01);廿碳五烯酸(EPA)含量分别为12.70%和14.92%,廿二碳六烯酸(DHA)含量分别为4.59%和9.32%,变异系数分别为11.37%和48.06%,说明1月与5月刺参体壁中的EPA、DHA含量有较大变化,且5月高于1月;两月中刺参体壁中的必需氨基酸含量分别占氨基酸总量的36.35%和36.79%,变异系数为0.85%,说明1月与5月刺参体壁中的必需氨基酸含量占氨基酸总量的变化不大;刺参粗蛋白质的氨基酸组成中,富含谷氨酸(Glu)、甘氨酸(Gly)等呈味氨基酸和精氨酸(Arg)。

Abstract:The contents of moisture,crude protein,crude fat,carbohydrate and ash and the compositions of fatty acids,amino acids were analyzed in body wall of wild Apstichopus japonicus Selenka sampled from Zhangzi Island located at Yellow Sea in January and May.The results showed that the contents of moisture averaged 90.92%,and 92.00% and there were significant differences(P<0.05) between in January and in May.The contents of rude protein,crude fat,carbohydrate and ash averaged 4.92%,3.40%;0.10%,0.31%;(0.19%),(0.30%) and 2.58%,2.93%,respectively,with significant differences(P<0.05).The contents of EPA,DHA averaged 12.7%,14.92% and 4.59%,9.32% with coefficients of variation 11.37%,(48.06%),respectively,with higher in May.The contents of essential acids accounted for 36.35%,36.79% of total amino acids with coefficients of variation 0.85%,which had not great changes.The protein was rich in tasty amino acids,such as glutamic acid(Glu),glycine(Gly) and argine(Arg).
