| 摘 要： | 报道了怀头鲇（Ｓｉｌｕｒｕｓ ｓｏｌｄａｔｏｖｉ）含肉率和营养成分的测定结果，并将此结果同南方大口鲇的含肉率、营养成分进行了比较。结果表明，怀头鲇的含肉率低于南方大口鲇和鲇，但怀头鲇肌肉氨基酸总量、４种鲜味氨基酸总量以及８种人体必需氨基酸总量均高于南方大口鲇和鲇。

| Abstract: | The content of flesh in body and nutrient composition of \%Silurus soldatovi\% were determined. Compared with \%Silurus meridionalis\% and \%Sililusasotus\%, there is less flesh rate in the body of \%Silurus soldatovi\% than that of \%Silurus meridionalis\% and \%Silurus asotus\%, but the muscle of \%Silurus soldatovi\% is rich in amino acid and four kinds of delicious amino acid and essential amino acid of human being needed. The result illustrates that the fish has high nutritive and commercial value, and would provides scientific basis for developing compound feed. |
