梅童鱼头营养成分的研究

目的]研究梅童鱼头的营养成分含量。方法]以梅童鱼头为原料,分析其营养成分并综合评价其营养价值。结果]梅童鱼头和鱼肉都含有多种维生素、矿物元素和氨基酸,梅童鱼头必需氨基酸含量占总氨基酸含量的37.73%,略低于梅童鱼肉的40.17%;梅童鱼头和鱼肉均含有多种不饱和脂肪酸,但梅童鱼头EPA和DHA的相对含量分别为7.56%和20.42%,较梅童鱼肉的5.81%和19.31%都高。梅童鱼头营养价值较高,可适当精制加工开发为新型的海洋食品。结论]研究可为梅童鱼的综合利用与高值化开发提供理论依据,对提高海洋生物资源原料利用率、推动水产加工产业技术升级具有积极的作用。

Analysis on Nutrients of Head of Collichthys Lucidus

Objective] To determine nutrients of head of Collichthys lucidus.Method] Analyzed nutrients and nutritive value of Collichthys lucidus with head of Collichthys lucidus as material Resuhs] both Collichthys lucidus and its head contain a variety of vitamins,minerals and amino acids.The essential amino acid of Collichthys lucidus head takes up 37.73％,slightly lower than the total amino acid 40.17％ ; both have multiple unsaturated fatty acids,but the relative content of EPA and DHA of its head is 7.56％ and 20.42％,slightly higher than the total value.Thus,head of Collichthys lucidus is a highly nutritive resource,and can be properly refined,processed and developed to new marine food.Conclusion] This study will provide a theoretical basis to utilize and develop head of Collichthys lucidus,and play a positive role in raising utilization efficiency of marine living resources and promoting upgrade of aquatic product processing technologies.
