摘    要:目的]研究壳聚糖对番茄果实藏期品质的影响,旨在为番茄果实采后贮藏提供理论依据。方法]以番茄为试材,采用浓度0.5%、1.0%、1.5%、2.0%壳聚糖(CTS)溶液浸泡1 min,在室温(10~15℃)下贮藏20 d,每5 d测定1次各项生理指标。结果]结果表明:与清水处理相比,浓度1.0%和1.5%CTS处理明显降低果实的失重率和腐烂率,延缓果实贮藏后期可溶性固形物、可滴定酸含量的降低,增加Vc的含量。结论]适合的CTS浓度可以保持果实较好的硬度,提高番茄果实贮藏品质。

Abstract:Objective] The research aimed to study the effects of chitosan coating on quality of stored tomato fruits and provide scientific references for the postharvest storage.Method] Harvested tomato fruits were immersed in 0.5%,1.0%,1.5% and 2.0% CTS solutions for 1 minute,then were stored at 10-15 ℃ for twenty days.Each physiological index was measured every 5 days.Result] The results showed that,comparing to the control,1.0% and 1.5% CTS treatment could reduce the weight loss rate and the rotten rate of fruits,maintain higher TSS content,titratable acid content and Vc content of fruits in the late storage period.Conclusion] Suitable CTS solutions could keep good firmness of fruits,and prolong the storage period of fruits.
