马尾松抗氧化试验研究

目的]证明马尾松松针中抗氧化因子的存在及各因子与马尾松松针抗氧化作用的协同关系。方法]以新鲜马尾松松针为试材,通过测定其提取液的过氧化值、酸价、VC、VE、VP和胡萝卜素含量研究了马尾松松针的抗氧化特性。结果]与未添加马尾松松针提取物的油脂相比,添加了马尾松松针提取物的油脂在同一时间测定的酸价较小,其在不同时间测定的酸价变化值也较小。添加了马尾松松针提取物的油脂被氧化的程度远远小于未添加马尾松松针提取物的油脂。马尾松松针提取物的Vc含量为4.092mg/kg,VE含量为21.000μg/kg,VP含量为36.385μg/kg,胡萝卜素含量为10714.300μg/kg。各抗氧化因子对松针抗氧化特性都有协同增效作用。各因素的协同增效作用依次为:VC>VP>VE>胡萝卜素。结论]马尾松松针含有抗氧化因子,可以作为功能食品的素材。
