广东汤的文化沿革

摘    要:对广东汤的盛行因素、养生原则、烹制方法及营养特点进行了概述,认为汤的形成与发展盛行受岭南地理环境的影响,同时也与广东居民追求养生食疗方式有关。广东汤体现养生食疗作用,注重因时制宜、因人施膳、选料配伍,讲究合理烹调技艺,不同原料的汤呈现不同营养特点。旨在为广东汤等饮食文化的发展提供参考。

Cultural Evolution of Guangdong Soup
Abstract:The prevalent factors,health principles,cooking methods and nutritional characteristics of Guangdong soup were outlined,and it was believed that the formation and development of Guangdong soup was influenced by the geographical environment of South of the Five Ridges,and it was also related to the way of folk health seeking and dietotherapy in Guangdong;Guangdong soup embodied the health diet,paid attention to the time,human,material and catering facilities,reasonable cooking skills,and different materials had different nutritional characteristics of soup.The purpose is to provide reference value for the development of Guangdong soup and other food culture.
