马齿苋黄酮类物质抑菌作用的研究

摘    要:研究了马齿苋黄酮类物质对几种常见微生物的抑菌活性。结果表明:马齿苋黄酮类物质对细菌有较强的抑制作用,对青霉、毛霉、根霉、黑曲霉的抑菌效果不明显,对啤酒酵母和热带假丝酵母无抑制作用;对细菌的最小抑菌浓度(MIC)分别为:大肠杆菌0.062 5%,枯草芽孢杆菌0.062 5%,金黄色葡萄球菌0.031 25%;热处理对马齿苋黄酮类物质的抑菌效果无影响。

Abstract:Antimicrobial effect of flavonoids of Portulace oleracea L.on the spoilage and food-borne pathogens was tested.The results demonstrated that the substance could effectively inhibit the growth of bacteria.To mould such as Penicillium sp,Mucor racemosus,Rhizopus sp and Aspergillus niger,the effect was ordinary,but it could not inhibit the growth of Saccharomyces cervisiae and Candida tropicalis.The antimicrobial minimum dosage to putrefied microbes was respectively as follows:Escherichia coli 0.062?5%,Bacillus subtilis 0.062?5% and Staphylococcus aureus 0.031?25%.Furthermore,the temperature had little influence on the antimicrobial effect.
