摘    要:目的]提取"紫娟"茶中原花青素并分析其聚合度。方法]考察不同因素对"紫娟"茶中原花青素提取得率的影响,并进一步分析提取物中原花青素聚合度。结果]提取温度、时间及茶粉目数随着水平的升高,原花青素亦相应提高,提取条件为水浴温度70℃、提取时间60 min、茶样粉碎度30目时能够保证原花青素的有效提取。利用(+)-儿茶素外标法所测得的"紫娟"茶提取物中原花青素的平均质量分数为64.11%,其平均聚合度为3.09,儿茶素的原花青素主要以低聚合度的形式存在于"紫娟"茶中。结论]该研究结果为原花青素的进一步研究与应用提供了理论依据。

Abstract:Objective]The aim was to extract proanthocyanidin from'Zijuan' tea(Ca mell ia si nensis var.Assamica)and analyze its polymeriza-tion degree.Method]The extraction parameters including water bath temperature,extracting time,and crumble mesh were investigated to find out the optimal extracting condition of proanthocyanidin from 'Zijuan' tea(Camellia sinensis var.Assamica),and the polymerization degree of proanthocyanidin in extract was analyzed.Result]The proanthocyanidin concentration became higher in the extraction solution with the growing level of each factor.And finally,with the condition of 70℃water bath temperature,60 minutes' extracting time and 30 crumble meshes,we could obtain the crude extraction of proanthocyanidin from 'Zijuan' tea effectively.There was about 64.11% of proanthocyanidin in this tea extraction on the average;furthermore,the average degree value of polymerization was 3.09,which indicated that the proanthocyanidin mainly existed in the oligo-type in the 'Zijuan' tea leaves.Conclusion]The result can provide theoretical basis for further research and application of proanthocyanidin.
