摘    要:目的]鉴别不同季节蒙顶甘露茶。方法]使用国标法对雅安地区春、夏、秋三季采用相同工艺制成的61组蒙顶甘露茶样进行测定,计算其茶多酚与茶氨酸的比值,并分析不同季节茶样该比值的差异。结果]夏秋茶的茶多酚/茶氨酸集中在15以上,而春茶的茶多酚/茶氨酸在15以下。结论]茶多酚/茶氨酸可以作为区分春茶和夏秋茶的良好指标,当茶多酚与茶氨酸的比值小于15时为春季产蒙顶甘露茶,比值大于15时为夏秋季产蒙顶甘露茶。

Study on the Characteristic Index of the Mengding Ganlu Tea from Different Seasons
Abstract:Objective]The research aimed to identify the Mengding Ganlu tea from different seasons.Method]61 Mengding Ganlu tea sam-ples which using the same manufacturing technology from spring, summer and autumn of Ya'an area were determined by national standard methods,the ratios of tea polyphenols to theanine were calculated,and the differences of the ratio of tea samples in different seasons were ana-lyzed.Result]The ratio of tea polyphenols to theanine in the summer-autumn tea concentrated in more than 15,while the ratio of tea polyphe-nols to theanine in the spring tea was below 15.Conclusion]The ratio of tea polyphenols to theanine was good for distinguishing spring tea from summer-autumn tea.The Mengding Ganlu tea can be judged as spring tea when the ratio of tea polyphenols to theanine is below 15 and can be judged as summer-autumn Mengding Ganlu tea when the ratio of tea polyphenols to theanine is more than 15.
