摘    要:目的]为紫蛇尾资源的综合开发利用提供理论依据.方法]对紫蛇尾(Ophiopholis mirabilis)提取残渣进行了营养成分分析.结果]紫蛇尾提取残渣中水分含量为1.420 0%,灰分含量为83.620 0%,粗脂肪含量为0.500 0%,蛋白质含量为9.030 0%,还原糖含量为0.030 0%,总糖含量为1.600 0%,多糖含量为1.570 0%,总氨基酸含量为10.71%,脂肪酸中不饱和脂肪酸含量较少,无机元素中Ca、Mg和Fe含量较高.结论]紫蛇尾提取残渣营养成分仍含量丰富,具有较高的开发利用价值.

Abstract:Objective] To provide a theoretical basis for the comprehensive development and utilization of the Ophiopholis mirabilis resources.Method] The nutrient composition analysis was conducted on residues of Ophiopholis mirabilis.Result] The contents of water,ash,rude fat,protein,reducing sugar,total sugar,polysaccharide and total amino acids were 1.42%,83.62%,0.50%,9.03%,0.03%,1.60%,1.57% and 10.71%,unsaturated fatty acid content were less in fatty acids,inorganic elements,such as Ca,Mg,Fe were also in higher level.Conclusion] It turned out that the extraction residue from Ophiopholis mirabilis has a good development and utilization value with its still rich nutrient.
