过程温度调节对罗非鱼冻干能耗及复水率的影响

摘    要:目的]探明过程参数变化对罗非鱼冻干能耗和品质的影响,为鱼类产品冻干提供较优的干燥工艺。方法]选取不同厚度的罗非鱼背部肌肉,以冻干能耗为指标对罗非鱼在真空冷冻干燥过程中调节加热温度进行了压力温度组合试验研究,并对不同参数组合下的冻干品进了复水率的比较。结果]试验表明,在相同的干品含水率条件下,冻干过程调温可使冻干过程的解析时间缩短,且冻干过程参数影响冻干能耗的主次关系顺序是:物料厚度〉真空室的压力和调温时物料中心温度〉加热板的低温温度〉加热板的高温温度,其优化组合参数是:物料厚度为10mm,真空室的压力为60Pa,加热板的温度从25调到37℃,且物料中心温度为5℃调温。优化纽合参数下的能耗为1.65kW·h/mm。同时试验还表明,不同过程参数下冻干的产品其复水率也是不同的,且调温后平均加热温度越低,其复水率越大,能耗越小。结论]过程温度的合适调节能降低冻干能耗,提高产品的复水率。
