摘 要: | 目的]优化酶法提取鱼鳞胶原蛋白的工艺,充分利用鱼类产品加工副产物。方法]以罗非鱼鱼鳞为原料,采用木瓜蛋白酶酶解的方法,优化鱼鳞胶原蛋白提取工艺,并分析所得胶原蛋白的性质。结果]试验表明,木瓜蛋白酶提取罗非鱼鱼鳞胶原蛋白的最佳工艺条件为:酶量为2.5‰,50℃下酶解时间为5 h。结论]试验所提取的胶原蛋白具有较好的吸水性、保水性和起泡稳定性,有良好的应用前景。

Abstract: | Objective] To optimize technique of extracting fish scale collagen with enzymatic method and fully utilize fish products processing by-products. Method] With tilapia fish scales as raw material, papain enzymolysis method was used to optimize the extracting technique, the obtained collagen properties were analyzed. Result] The results showed that, the optimal conditions were enzyme dosage 2.5%0, 5 h under 50 ℃. Conclusion ] The collagen has good water absorption, retention, foaming stability with fine application prospect. |
