摘    要:目的]研究蔗糖基聚合物对成熟期毛葡萄果实营养成分的影响。方法]以葡萄酿酒新品种NW196为供试品种,用浓度为0.25%、0.50%、0.75%、1.00%的蔗糖基聚合物水溶液于果实成熟期喷施毛葡萄植株,并于喷施当日及喷施后每隔4d分别取果实样品进行可溶性固形物、总糖、Vc及可滴定酸等营养成分的测定。结果l蔗糖基聚合物可作为植物生长调节剂对毛葡萄有很好的增甜降酸效果,可明显提高糖酸比,从而达到改善水果品质、增强口感的功效,其中O.50%的蔗糖基聚合物水溶液在毛葡萄成熟期喷施的综合效果最佳,可增加甜度15.09%,在喷施第12天,果实Vc含量比对照株高出30.04%。{结论]蔗糖基聚合物不但能快速提高毛葡萄中可溶性固形物、总糖和Ve的含量.还能降低可滴定酸.
