摘    要:目的]研究提高猪肉品质的方法,促进猪业的发展。方法]阐述电解质的生理功能、应激对机体电解质平衡和胴体品质的影响、电解质平衡在养猪业上的研究进展,最后提出展望。结果]关于电解质在养猪生产上的应用已开展了大量的研究,多数集中在日粮电解质平衡与猪生产性能的关系、氨基酸营养状况等之间的关系及宰后猪肉注射电解质改善肉质等方面;有关猪宰前通过饲料或饮水补充电解质以提高肉质的研究不多,且效果不理想。结论]应继续开展大量试验研究,实现通过宰前饲料或饮水补充电解质,以达到改善猪肉品质,将对猪业发展具有重要的意义。

Abstract:Objective] The purpose was to study the methods of enhancing pork quality so as to promote the development of pig industry.Method] It was expounded that the influences of physiological function and stress of electrolyte on the electrolyte balance of organism and carcass quality and the research progress of electrolyte balance in pig industry.Finally,the prospect was put forward.Result] A lot of researches about the application of electrolyte in pig production were done.Most of these researches centralized on the aspects such as correlations between the electrolyte balance of rations and the production performance and the nutritional status of amino acid etc.in pig and improving meat quality by injecting electrolyte into pork after slaughter.The researches about enhancing meat quality by supplementing electrolyte through feed or drinking water before slaughtering the pig were not much and the effect was not perfect.Conclusion] Lots of experimental researches should be carried on to realize improving pork quality by supplementing electrolyte through feed or drinking water before slaughter.This will have important meanings for the development of pig industry.
