摘    要:目的]探讨影响芝麻渣蛋白萃取效果的因素,确定最佳萃取工艺。方法]利用AOT/异辛烷反胶束体系萃取芝麻渣蛋白,以芝麻渣蛋白萃取量为考察指标,通过正交试验设计确定4个因素,即芝麻渣加入量、前萃pH值、KCl浓度以及反萃取时间的最佳组合。结果]芝麻渣加入量为0.06g/ml,前萃pH值为3,KCl浓度为1.5mol/L,反萃时间为20min时,芝麻渣蛋白的萃取量最大,萃取率达86%。结论]反胶束萃取体系有利于芝麻渣蛋白的提取。

Abstract:Objective]To investigate the factors affecting sesame residue protein extraction and find the optimum extraction conditions. Method]AOT/isooctane reverse micelles system was used for extraction of sesame residue protein.
