摘    要:随着食品工业的发展和食品安全问题的不断出现,食品工业运用的清洗和消毒技术就显得越来越重要.概述了食品工业中清洗和消毒的方法、类型以及常用清洗剂、消毒剂的性能,同时介绍了原地清洗系统(CIP),讨论了食品工业在清洗与消毒的过程中存在的问题和解决方法.

Abstract:With the development of the food industry and the appearance of the food safety problem,cleaning and disinfection technology become more and more important.This review provides an overview of methods and types of the cleaning and disinfection technology in food industry.In this article,the performance of the disinfectant and cleaning agent and cleaning in place (CIP) were also covered.In order to give some help to the food industry,the problems and solving methods in the process of the cleaning and disinfection were also discussed.
