摘    要:目的]研究脂肪氧化酶同工酶对水稻种胚脂质代谢的影响。方法]对LOX-1和LOX-2缺失品种皖鉴2090以及LOX-3缺失品种冲腿和正常品种汕优63的种子进行人工加速老化处理,研究不同脂肪氧化酶同工酶缺失水稻种子游离脂肪酸和脂质过氧化产物的变化。结果]种子老化处理期间,皖鉴2090的游离脂肪酸含量低于冲腿和汕优63,其增加速率慢于冲腿和汕优63;多聚不饱和脂肪酸含量始终较高,其降低速率慢于冲腿与汕优63;丙二醛含量始终最低,其增加速率最慢。冲腿的游离脂肪酸增加速率、多聚不饱和脂肪酸降低速率均介于皖鉴2090和汕优63之间。结论]LOX-1、LOX-2缺失可降低水稻种子脂质过氧化水平和过氧化速率,LOX-3缺失可减轻水稻种子脂质过氧化水平。

Effect of Lipoxygenase Isozymes on Lipid Metabolism of Rice Embryos
Abstract:Objective] The study was to research the effect of lipoxygenase isozymes on lipid metabolism of rice embryos.Method] The seeds of LOX-1 and LOX-2 gene-deleted variety Wanjian 2090,LOX-3 gene-deleted variety Chongtui and the normal variety Shanyou 63 were treated by artificial accelerated aging,the change of free fatty acids and peroxidation products in different varieties deleted by lipoxygenase isozymes were studied.Result] During the aging treatment on seeds,the free fatty acid content in Wanjian 2090 was lower than that in Chongtui and Shanyou 63,and its increasing rate was slower than that in Chongtui and Shanyou 63.The polyunsaturated fatty acid content in Wanjian 2090 was always higher,and its decreasing rate was slower than that in Chongtui and Shanyou 63.The malondialdehyde content in Wanjian 2090 was always the lowest,and its increasing rate was most slow.The increasing rate of free fatty acid and decreasing rate of polyunsaturated fatty acid in Chongtui were between Wanjian 2090 and Shanyou 63.Conclusion] LOX-1 and LOX-2 gene deletion could decrease the lipid peroxidation level and peroxidation rate in rice seed,LOX-3 gene deletion could reduce the lipid peroxidation level in rice seed.
