饲养方式对淮南麻黄鸡屠宰性能和肉质的影响

目的]研究不同饲养方式对淮南麻黄鸡屠宰性能和肉品质的影响。方法]选取20只62周龄笼养和林地散放饲养淮南麻黄鸡母鸡(各10只)进行了屠宰性能和肉品质测定。结果]饲养方式对淮南麻黄鸡老母鸡体重、半净膛率和全净膛率无显著影响;而对产肉性能、消化系统的发育和肉质影响显著,放养组母鸡胸肌率、腿肌率、翅膀率以及肝脏、腺胃、肌胃的相对重量均高于笼养母鸡,其中胸肌率和肌胃的相对重量达到极显著水平;肌肉的系水力和胸肌肉色L*、a*和b*值均显著高于笼养组。结论]放养方式饲养淮南麻黄鸡,可促进消化器官发育,增加产肉率,提高鸡肉品质。

Effects of Different Rearing Systems on Slaughtering Performance and Meat Quality on Huainan Partridge Chicken

Objective] The experiment was conducted to study the effects of different rearing systems on slaughter performance and meat quality of Huainan partridge chicken.Method] The total of 20 hens at 62-weeks-old of Huainan partridge chickens reared in cages and pasture(10 each group) were slaughtered and used to determine the slaughter performance and meat quality.Result] The results showed that there were no significant differences on body weight,percentage of half-eviscerated yield and percentage of eviscerated yield between two groups.Compared to the cages group,the percentage of abdominal fat was lower,the percentage of breast muscle,leg muscle and wing were higher.However,the percentage of breast muscle was significantly higher than that of cage hens.The relative weight of liver,glandular stomach and muscular stomach were higher in pasture group,respectively,and that of the stomach muscles very significant increased compared with the cages group.The shear force of breast and leg muscles from pasture group were higher than that of caged hens,while water holding capacity was significantly higher than that of cages group.The values of L*,a* and b* of breast muscle in pasture group were higher than that of caged groups,respectively.Conclusion] The hens of Huainan partridge chicken raised in pasture have superiority in some slaughter indices,especially meat production rate and development of digestive organs and meat quality compared to those of caged hens.
