摘    要:目的]研究草鱼皮基本成分及鱼皮胶原蛋白的提取工艺。方法]通过正交试验确定有机酸提取草鱼胶原蛋白的最佳提取工艺条件,并对所提取的胶原蛋白进行紫外光谱分析币口氨基酸组成分析。结果]结果表明,采用0.5mol/L的柠檬酸,料液比为1:10,溶胀时间为24h时,可充分提取草鱼皮中的胶原蛋白,提取率可达92.88%。结论]该研究可为开发草鱼的附产物提供科研依据。
