鱼肝油微粉的制备研究

摘    要:以微孔淀粉为载体,玉米醇溶蛋白为壁材,油酸为增塑剂,制备鱼肝油微粉.结果表明,玉米醇溶蛋白用量15%~20%,油酸用量为壁材的0.3%,制得的鱼肝油微粉包埋率不低于94%,产品具有抗氧化、无异味、耐储存、方便食品和医药工业使用的优点.

Abstract:The micro-encapsulated fish-liver oil was prepared and embed with microporous starch as supporter and zein as wall layer and oleic acid as plasticizer. The result showed that the embed ration of the micro-encapsulated fish-liver oil, which was prepared through successive adding of 15% - 20% amount of zein and 0.3% of oleic acid plasticizer as the wall material,was more than 94% .The micro-encapsulated fish-liver oil had many merits such as anti-oxygenation, none-peculiar smell, storability and easy for using in food and drugs industry.
