| 摘 要： | ［目的］对生地黄色素的抑菌活性进行研究。［方法］以生地黄为原料，乙醇为萃取剂提取生地黄色素，利用平板打孔法和连续二倍稀释法分别考察生地黄色素对大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌、酿酒酵母、产朊假丝酵母和黑曲霉的抑菌活性及最低抑菌浓度。［结果］生地黄色素对大肠杆菌、金黄色葡萄球菌、枯草芽孢杆菌均有一定的抑菌活性，最低抑菌浓度分别为0.0625、0.0312、0.0312g/ml，对酿酒酵母和产朊假丝酵母没有抑菌作用，对黑曲霉的生长有着复杂的影响。［结论］生地黄色素在作为活性天然色素方面具有一定的开发利用价值。
