菜籽油酶法脱胶条件优化

摘    要:目的]寻找菜籽油的最佳脱胶工艺。方法]利用磷脂酶Lecitase Ultra对菜籽油脱胶条件进行优化,通过单因素试验、正交试验并结合生产成本确定最佳脱胶条件。结果]最优脱胶条件:加酶量为66.67 mg/kg,起始pH为5.5,反应温度为40℃,反应时间为4.5h。在最优条件下进行脱胶,菜籽油含磷量为5.46 mg/kg。结论]在最优条件下脱胶效果良好。

Abstract:Objective] The aim was to find the best degumming technology of rapeseed oil.Method] Phospholipase Lecitase Ultra was used to tested for the optimization of degumming factors of the rapeseed oil,and the optimum conditions were studied by single factor experiments,orthogonal test experiment and production costs.Results] The optimum reaction condition were as follows:phospholipase dosage was 66.67 mg/kg,initial pH value was 5.5,reaction temperature was 40 ℃,reaction time was 4.5 hours.Phosphorus content of rapeseed oil were decreased from 83.31 mg/mg to 5.46 mg /kg.Conclusion] Degumming effects performed better in the optimal degumming experimental conditions.
