摘    要:目的]确定黄金梨果肉硬化症发生的关键时期。方法]以黄金梨为材料,研究了黄金梨果实果肩部和果顶部细胞壁组分及其降解酶活性的变化。结果]随着黄金梨果实的生长发育,果实纵、横径逐渐增大,果实生长曲线呈单"S"型;果肩和果顶部细胞壁组分及其降解酶活性的变化趋势相似,纤维素和原果胶含量逐渐下降,可溶性果胶含量逐渐上升;纤维素酶(Cx)活性逐渐增高,果胶甲酯酶(PME)活性逐渐下降,多聚半乳糖醛酸酶(PG)活性先上升后下降;果肩和果顶的可溶性果胶含量CX、PME和PG活性在果实膨大期发生转折,果实膨大期是黄金梨果肉硬化症发生的关键时期;纤维素和Cx可能在果肉硬化中起着关键作用。结论]该研究为果肉硬化症的防治提供了理论依据。
