小麦粉添加剂过氧化苯甲酰的作用机理及安全性研究

摘    要:从过氧化苯甲酰的分子结构入手,阐述了其理化特性和用途。通过对过氧化苯甲酰的合成和作面粉添加剂的背景出发,探析了过氧化苯甲酰作为面粉添加剂的作用机理和安全性。通过试验比较了各种过氧化苯甲酰检测方法,提出了较好的检测方法。根据国内、国际食品添加剂使用标准,指出了过氧化苯甲酰作为面粉添加剂的可行性;同时针对当前一些在面粉中滥用过氧化苯甲酰添加剂的现状,提出了行之有效的应对措施。
